Alomond Chicken Pho

The ultimate comfort food!

Ingredients

- Garlic-infused olive oil
- 5 chestnut mushrooms, sliced
- Handful of beansprouts
- 5 pak choi leaves, sliced in half lengthways
- 100g cooked chicken, pulled
- 1 tsp coconut aminos
- Some cracked pepper
- 75g rice noodles, boiled already and cooked
- 1 tbsp Knotty’s Almond Butter
- Handful of coriander
- Half a lime
- Handful of chopped nuts

Method

Step 1

Fry the mushrooms in garlic oil until softened.

Step 2

Add in the beansprouts and pak choi and fry for a further few minutes until these begin to soften.

Step 3

Next, add in the chicken, chicken broth, coconut aminos, and pepper and fry until broth melts into liquid form again and the chicken is warmed through.

Step 4

Add in your pre cooked rice noodles - you can also cook them at this stage in with the rest of the ingredients it will just take a little longer - and Knotty’s Almond Butter.

Step 5

Stir through well. Serve, and top with some coriander, a squeeze of half a lime, and some chopped nuts.
